Southwest Chicken Burritos


I love turning one meal into many meals. Last night I cooked a whole chicken in my crock pot and there was plenty left over for tonight's dinner. There are still leftovers for tomorrow's dinner: Southwest Chicken Salad.

Southwest Chicken Burriots

Ingredients:
Leftover chicken, shredded (or you can boil chicken breast and shred)
1 can black beans, drained
1 can diced green chilies, drained
1 can corn
1/2 cup chopped scallions
1/2 cup chopped red peppers (or your favorite peppers)
1/2 onion chopped
Chili Powder to taste
tortillas

Directions:
Heat all of the ingredients together in a big frying pan. Once everything is heated thorughly, assemble your burritos. Eat and enoy!
