Artichoke Pasta with Argula Salad


This is one meal that my family frequently requests. It is simple to make and delicious.

Pasta Ingredients:
1 package of pasta (I love using whole grain pasta, not shown)
1 bell pepper, roughly chopped (I used a purple bell pepper, but you can use any color you wish)
1 jar of artichokes, drained and roughly chopped
1 small onion, chopped
1 cup fresh mushrooms, chopped (not shown)
Olive Oil

Directions:
Cook pasta according to package directions. In medium frying pan sautee bell pepper, onion and mushrooms just until tender. Once pasta is cooked and drained, mix pasta, artichokes and sauteed vegetables . Drizzle olive oil over pasta and mix.
Serve and Enjoy

Salad Ingredients:
Arugula leaves
Dried Cranberries
shelled sunflower seeds
halved cherry tomatoes
Thinly sliced cheese
Olive Oil (optional)

Directions:
In my household I let everyone assemble their own salads. I simply lay out the ingredients on the counter and they pick and choose what they want to add and how much . It's fun for the whole family.

My family and I usually drizzle olive oil over our salads, but you can use whatever your family enjoys. The idea is to make dinner a pleasurable eating experinece, so feel free to add or omit ingredients as you see fit.
